Shorten chain yes or no

I still have a bit of room to tighten my chain with the adjusters however by moving my wheel back a bit further i would be reducing the clearance between my fender and my tire (softail Saxon Griffin) andclearance is already at a minimum. My chain is loose and needs to be adjusted. Is there any problem removing a link or two from my chain as my sprockets and chain all seem to be in good shape. 530 oring chain on the bike.

how many links should I remove if okay to remove links

I see no issues, as long as you don't make it too short...
I hope it stretches evenly, because if you have significant high and low spots, you may want to consider a new chain.
I would go with the Ek 530 x ring chains with the most tensile strength available...

In the past I have always removed two... to start with...replace it with a master link and then you are one link shorter...then go from there..
