If I was to build another bike I would build the same bike but leave off the oil tank/jackshaft box and go with right side drive. It would eliminate weight and make the wheelbase shorter. A lot shorter.

I have not used belt drive before but right side drive with belt would give some protection from the shock on the drive line.

I still think the Yamaha Roadstar engine is the most beautiful engine and makes the most sense to build a chopper with.
